Pork Steak and Gravy

Anyone from the Gulf Coast will be familiar with this one-pan Cajun dish, which I learned from my Granny. Seared, well-seasoned pork steaks simmer in liquid until that liquid becomes a thick gravy. We like to serve it over rice, but the dish also goes great with my Roasted Garlic and Leek Mashed Potatoes and Corn and Zucchini Hash, too.
