Corn and Zucchini Hash
I have a neighbor who shares his corn, zucchini, and yellow squash harvest with me every summer, and I return the favor by giving him my cooked meals. Our exchange has inspired many of my favorite recipes in this book, such as this one! It's important to use fresh corn in this recipe, because frozen kernels do not work the same. And with the bacon or sausage in here, we happily eat this as a standalone meal.
