Roasted Garlic and Leek Mashed Potatoes

Leeks belong to the onion family, but they're softer and sweeter, and the flavor they add to mashed potatoes is so, so good! I strongly recommend using Yukon gold potatoes, which complement the flavors of the sweet leeks and roasted garlic better than Russets or red potatoes. And if you want to skip roasting the garlic, just sauté a few cloves along with the leeks instead.
