BBQ Chip Chicken

I must double, if not triple, this recipe when I make it! We are partial to thin-cut BB2 potato chips for the crispy coating, because they're easier to crush up finely, but it's easy to change up the direction of the recipe by swapping the chips for crushed cornflakes, Ritz crackers, or your favorite flavor of Doritos.
