Creamy Chicken and Rotel Soup

If there's one thing I love about soup, it's that it checks every box; cozy, comforting, and all cooked in one pot. Around here, we consider soup a full-on dinner, especially when it's loaded up with hearty ingredients and served with a slice of bread crispy garlic bread (or two). I love making big batches so we can enjoy it for a couple of days and it always seems to taste even better the next day! Some weekends, I'll even make a few different soups in one day so we can mix and match throughout the week.
