Welcome back to the weekly recipe schedule!

Things have finally settled down after our busy weekend, and now it’s back to making sure y’all have some easy, no-fuss recipes to get dinner on the table this week!

Me and Mr. Don’t Ask just got back from a long weekend in Branson, MO—we went to see Post Malone in concert, and let me tell you, it was worth every mile! I love eating out when we’re out of town (I don’t say no to a good fried appetizer), but there’s just nothing like coming home to a cozy, home-cooked meal.

We drove a whole bunch of winding back roads through Arkansas and Missouri to get there, and every bit of it was absolutely beautiful. So if you’re from either of those states, thank you for sharing your stunning scenery with us—y’all live in a postcard!

Now that the small talk is out of the way, let’s get to cooking!

Recipes and Schedule

Monday 6/16 Rice a Roni Mexican Rice

2 pounds ground beef

1 yellow onion

2 boxes Rice a Roni Mexican style rice

1-10 ounce can Rotel

12 ounce bag or 15 ounce can fire roasted corn

1/2 stick butter

32 ounces beef broth

1 1/2 cups shredded cheddar

1 tsp onion powder

1 tsp garlic powder

1 tsp pepper

Tuesday 6/17 Cheesy Sausage and Rice

1/2 yellow onion

1 red bell pepper

1 green bell pepper

1 1/2 pounds smoked sausage

3 tbs minced garlic

1-pound shredded cheddar

1 tbs creole seasoning (optional, I don’t always add this)

1 family size can of cream of chicken soup

3 cups Minute Rice

3 cups chicken broth

Wednesday 6/18 Meatball Stew

Meatballs

1 pound ground beef

1.5 pounds ground pork

2 eggs

3/4 cups breadcrumbs, any kind

Season to taste with onion powder, garlic powder, Cajun seasoning, Worcestershire sauce, salt, and pepper

Stew

3 ribs of celery

1 green bell pepper

1 yellow onion

Minced Garlic

4 cups beef broth

3 cups water

Season to taste with onion powder, garlic powder, Cajun seasoning, salt, and pepper

Rice or mashed potatoes for serving

Thursday 6/19 Southern Fried Cabbage

1 head of cabbage

1 pound of bacon

1 yellow onion

Season to taste with Onion powder, garlic powder, Cajun Seasoning, salt, and pepper
